• Spicy ‘tuna’ Tacos
• 1 block extra firm tofu
• 1 small carrot
• 1 tbsp soy sauce or coconut aminos
• 1/3 cup chopped chives
• ½ cup mayonnaise (v)
• 1 tbsp furakkake seasoning (or finely diced dried seaweed)
• 1 tbsp old bay seasoning
• 1 tsp sriracha
• Cucumber cut into sticks
• Avocado slices
• 1 cup white rice, cooked
• Nori sheets

Into a bowl shred tofu and carrot. Add mayo, soy sauce, seasonings and sriracha (adjust to preferred spiciness level) and mix well.

Tear nori sheets into mini taco sized shells. Add a spoonful of white rice, cucumber and avocado slices, and a heaping spoonful of spicy ‘tuna’ mixture. Top with chopped chives, enjoy!
